Breaking News: Beans Are In The House.

I am always on the lookout for a 15 carb snack that Zoe can have that doesn’t wreak havoc on her blood sugar. (If she eats more than 15 carbs, she usually needs a shot of insulin.)

On a whim, I roasted garbanzo beans in the oven and they were a huge hit. Except with Troy, he’s four. He wasn’t having it. 1/2 cup of garbanzo beans=15 carbs, success.

Main players:

Beans, salt, spice of your choice, olive oil.

ingredients

Rinse your beans and pat them dry with paper towels. Toss them with all your ingredients. Roast in a 400 degree oven for 30 minutes.

These were gone in two minutes. Beans and stable blood sugars for everyone, hooray!

    I don’t have diabetes but I do have gut problems which seriously limit the amount of carbs I can have. I am going out to buy some garbanzo beans! Thanks so much.

    I will try this not for me (I think Garbanzo beans are yuck), but for the kids. Maybe I could convince them they are better than potato chips. :)

    These are our favorites. Nico loves them, and has loved them since he was a toddler! Mikey…not so much. He hates garbanzo beans. He loves my beer beans, though!

    I saw a recipe on Pinterest similar to this but called for soaking (or boiling…can’t remember) them in vinegar first, then tossing them in some salt so it’s like a vinegar and salt bean. Sounds delish no matter how you fix them though!!!
